A weekly roundup: eats, watches, and reads. In this week's news, I saw the breaking news that Parmesan Chicken is the New Engagement Chicken, which makes complete sense to me. Parm chicken is one of the easiest meals that I know how to make and my husband adores it. The more I think of it, I'm pretty sure that's the first thing that he ever cooked for me.
(P.S. my husband claims that he doesn't cook, which I've exposed many times as a lie on this blog. He also claimed that he'd never heard of engagement chicken).
Breakfasts
Monday: homemade Egg McMuffin with chicken sausage
Tuesday: breakfast burrito
Wednesday and Thursday: cereal bar, string cheese, fruit
Friday: avocado toast
Saturday: hub's freshly made waffles and bacon
Sunday: omelette with mushrooms and cheese
Lunches
Monday & Wednesday: spinach artichoke pasta
Tuesday, Thursday, Friday: lunches at work
Saturday: quickie burrito thrown together from black bean dip, cheese, avocado, and salsa (take my word for it that's what's in there)
Sunday: I saw a lo mein recipe that looked interesting, so I threw it together from a bunch of things I had lying around the house: linguine, soy curls, and Costco stir fry veggies. It was just alright, kinda bland. I think it tastes like lo mein is supposed to taste, I was just expecting something else. I portioned up the leftovers for lunches.
Dinner
Monday & Tuesday (family meals): leftover tacos
Wednesday (date night): ah guys, this one is a fail. I tried to make chicken fried steak in the air fryer...the breading was pretty soggy and that gravy is thicc and not in a good way. So far I'm 0/2 in chicken fried steak attempts, once on the stove top and now in the air fryer. My conclusion is that the proper way to make chicken fried steak is to go to Bob Evans.
Thursday (date night 2): the above mentioned chicken parm
Friday (par-tay): our annual open house party at work
Saturday (date night 3): we hit the party pretty heavy so we wanted a simple dinner. I whipped up some mashed potatoes, he had Costco chicken skewers and I had chicken sausage with mine.
Sunday (family meal): twice baked potatoes and meatloaf.
Watching
- From the treadmill: cranking away on season 2 of Suits
- From the couch:
- Exciting news, hubs and I have a new date night show! Date night shows are hard to come by because we get attached to them and it's sad when they're over. Stan Against Evil is just silly, kinda a less gory version of Ash vs Evil Dead.
- And on Saturday we saw Young Frankenstein...I made it very clear to hubs that we will be watching the original soon
Reading
I finished The Mother-in-Law by Sally Hepworth. It took me just a bit to get into it but by the end I was hooked. I'd give anything to have MIL problems (hub's mom passed before we got married😢)

ReplyDeleteI make chicken parmesan (along with beef braciola) once a year for our annual Italian Dinner Party. My chicken parm recipe is very time consuming and that's why I usually only make it once a year. ;-)
