I have a kind of work amnesia. Logically you would think I would know that the first few days of the month are always my busiest at work and that there's an excellent chance that I will be the last one home and most likely miss a dinner or two...but I seem to forget that every month. Luckily my better half was on top of things and made my meal plan work.
Breakfasts
In addition to my beloved breakfast burritos, I made room for my latest crush of cheesy English muffins.
On long run day, I fueled up with air fryer french toast and chicken sausage
Lunches
I brought leftover shredded BBQ chicken and tortillas to make quesadillas, and once those were gone I filled in with some good meals from work. They had steak fajitas and tempeh one day and lots of leftovers, so I simply filled up my lunchbox and ate steak salads for several days and brought the tempeh home.
On both weekend days, I put the tempeh to use in "fridge cleanout burritos". Approximate recipe: raid freezer for rice and Trader Joe's pepper mix, thaw and add refried beans, tempeh, cheese, and salsa. Roll everything into a burrito and air fry it for a few minutes, with a hearty dipping of guac.
Dinners
Monday and Tuesday (family meals): we couldn't sell the steps on leftover pot roast but the adults were all over it. We had leftover stir fry but only one serving so we fell back on mac n'cheese and quesadillas for the kids.
Wednesday (date night, family style): plan A was to make a big ol' batch of white BBQ chicken that we could eat off for the next few days. But as the day progressed it was clear that I was going to have to stay late for work AND it turned out that there was an event at school and the short notice meant that it was just easier all around for the steps to stay with us instead of going to their mom's house. All of a sudden it was really handy that there was a family sized meal sitting around just waiting to go on the grill. Hubs and steps grilled up and ate before the event, and when I got home I had a cooked dinner waiting for me.
Thursday (fend for yourself night): I finished up the stir fry from Sunday. I usually won't bake up the frozen Costco egg rolls that we keep around just for me, but I wanted a treat and it occurred to me that hey that's why we have an air fryer!
Friday (family meal): 'tis the season. Fish fry
Saturday: family birthday party for one of the cousins. Pizza, fried chicken, and cake.
Sunday (family meal): We needed an early dinner and I was still kind of out of it from my long run, so I turned to my soul mate and he made stove top tuna noodle casserole. The steps poked a little fun at it but everyone ate it.
Watching
Family movie night: Stripes.
On my own: finished Love is Blind, and sure there I could probably have put the 10 hours I spent watching it to better use, but hey sometimes the brain needs a rest.
Reading
It's tough when you come off of reading a great book (Long Bright River) and fall right into a so-so book (Redacted, since you're probably not looking for so-so book recommendations). I turned the pages on [Redacted] just to see what happened and then went looking around and BAM! fell into a another good book: The Sweetness at the Bottom of the Pie.
Yum, sounds like a lot of good meals! You really out that air fryer to good use this week.

Yes, it was really good. We're eating leftovers/my husband is cooking this week because I'm still kind of in a haze from work/time change.
DeleteI'd love to have an air fryer. I love my instant pot and use it all the time so I think that might be my next kitchen gadget. I like the idea of the 'whatever you have left' burritos! I almost always have rice and some sort of meat on hand.
ReplyDeleteJust add a tortilla and you've got a good meal! The air fryer is really handy, I'm really happy with that purchase. Not sure about the IP yet, we're keeping it but I don't think we'll use it very often.
DeleteOkay...no hating, but I don't have an air fryer either LOL But, I love left-overs ;-) The hubby is out of town a few nights each week, and that's when I feast on what's left in the fridge ;-)
