Breakfasts
Were actually pretty varied this week: avocado toast, homemade egg McMuffins, and an omelette and hash browns before long run day.
Lunches
I adored the thai curry soup that I made last week. although it was too light on its own so I had a bagel on the side.
Dinners
Monday: we finished the tortellini soup and I'm so pleased that we got two fulls meals out of it. That's getting rarer and rarer these days. I did have to stop by the store to get more bread to have as a side.
Tuesday: a busy day at work so I "phoned a friend" a.k.a asked the hubs to take over dinner duties.
Wednesday: a busy day at work for both of us so I "phoned a friend" a.k.a made the time to go out and pick up Chipotle.
Thursday: whew! I had enough breathing space and inspiration to crank out a semi homemade meal...chicken parm via Costco panko chicken in the air fryer.
Friday: you know that our pandemic shtick is takeout on Fridays and burgers on Saturdays. but because of a certain someone's birthday we did a switcheroo and had burgers on Friday.
Saturday: Happy Birthday to a certain stepson! We had pizza by special request and of course our standard birthday cake...official recipe here and a look at how I make it here. I debated whether to make the full recipe since it's huge but I needn't have worried because it's going fast.
Sunday: hubs mentioned that he was craving meatloaf, and wouldn't you know I had everything we needed to make it in the house so it was easy to make it a reality.
Watching
You can tell we're back at work from the lack of TV that was watched in this house this week. But hubs found a show on HBO called His Dark Materials. He thought it would be a good family show but the boys passed on it so it's now a couples show. It took me just a little bit to get into it, but I'd say by halfway through the first episode I was all in.
Reading
Still not feeling the books, and hey, I'm not in school anymore so I don't "have" to read if I don't want to! Life is good.
That "Copycat Dairy Queen Ice Cream Cake" looks fabulous!

Your Sunday plate looks delicious but I think I would have helped myself to more mashed potatoes. Is it homemade mash?
I am STILL on Modern Family. I just realized that I have to catch up on about 12 years of episodes...
Absolutely it's homemade mash and I am the worst at getting my portion sizes right. It's been a while since I've seen Modern Family, but I remember that it was really funny. I should check it out again.

ReplyDeleteWe are struggling to find things to watch too. It's almost overwhelming, the choices that are streaming, but not much is good. Books tho, I've already read a few good ones: The Push, The Girl with the Louding Voice, and Matchmaking for Beginners were all great books to start the year off with!
Thanks for the recs! I've gotten a lot of good book ideas from your blog. Totally agree on TV...so much out there and so little to watch.
