Weekly Eats: Pie Edition

 

A weekly round up: eats, watches, and reads.  This is one of those rare weeks when the name of my blog is appropriate - I made pie!  It's a chicken pot pie and everything in the universe lined up and it was one of the best crusts that I've ever made.  The family's conclusion is that now we need to make an apple pie, so as soon as we get a free moment, we will make that happen.

Breakfasts

A lot of Clif bars and a homemade Egg McMuffin


Lunches

I had two pieces of salmon in the freezer and an avocado that needed to be used up so that was the inspiration behind lunch.  Rice from the freezer, Costco stir fry veggies, air fried salmon filet, avocado, sushi ginger, wonton strips, and the dressing from Skinny Taste (without the wasabi).


And then my eye fell on a handful of roasted sweet potatoes in the freezer, so I added a chicken sausage and veg for another freezer cleanout meal.


And then more leftovers after that!  We had fried rice for dinner which I topped with a nice drippy egg for my final lunches of the week.

Dinners

Monday: leftover meatloaf


Tuesday: hubs got a rotisserie chicken for himself and the boys, I had a chicken sausage for my main fix.

 

Wednesday and Thursday: we really, really like fried rice.  This is a loose riff on Gimme Some Oven. The loose part is that I add ginger, and we usually have mushrooms but didn't feel like going to the store so we left them out, and I add a stir fried chicken breast.  I also stir a big spoonful of sambal oelek into my portion, but that kind of goes without saying.  Costco egg rolls on the side.

Friday: date night, out to the drive in hamburger place.

Saturday: date night II, takeout from the Mexican place.  And when we say "takeout" that includes margaritas.


Sunday: it turned cold, so chicken pot pie was called for.  The filling is from Two Peas and Their Pod and the crust is from me (first post y'all!)


Watching

We finished the first season of His Dark Materials and are looking forward to more.

Reading

One by One by Ruth Ware.  From what I've read so far it looks like a riff on And Then There Were None, which is one of my all time favs, and yes I approve and appreciate the retelling.

    If you're going to make apple pie, you know which one you have to make, right? Coco's PIA apple pie! ;-)

    On the flight home this weekend I saw a fantastic film: "The Good Liar" with Helen Mirren and Ian McKellen. I can't believe I missed that until now. Such a great story and fantastic actors.

    I'll have to look into "And Then There Were None", I have never heard of it.

  4. Such a great variety, both with lunches and dinners! Gotta say that chicken pot pie looks yummy...I haven't made that in a couple months, but we're about due for a reprise ;-)
