Weekly Round Up: Let's Catch Up!

A weekly round up that's not very weekly since I'm catching up several weeks: eats, workouts, watches, and reads.  Let's start with life updates!

Life Updates - Fam Edition

We've had some pretty major (happy) changes at home:

  • The College Empty Nest Era has begun!  Both boys are living their best dorm lives.
  • Hubs has a new job, and is now WFO - work from office.  Once he's fully settled in to the new gig it will be a hybrid role, but right now he's commuting five days a weeks like it's 2019.  
So the ol' home life has become quite different recently.  It's peaceful, but a little too peaceful, you know?

Life Updates - Me Edition

You guys I quit the jobby job for real!!!  We'd left things kind of open ended where they were going to look into making it a part time role and I was not going to let work stand in the way of my travel plans.  I had a lot of issues with boundaries on the BC trip and (1) said no to doing some obnoxious, time consuming tasks that could/should have been done by other people and (2) ended up working way more than I wanted to.  I have a bad habit of letting other people call the shots and seeing what happens, but I was finally ready to put my big girl pants on and quit.  I think that me turning down work plus working irregular hours for two weeks made an impression, because for my first one on one meeting with my boss when I got back, she asked if I still wanted to leave.  I have never had an easier time saying yes.  My boss asked me to write a resignation letter to make it official, and I happily complied.  As of right now my job is posted and they're interviewing candidates.  Freedom is in sight!

Eats

Doggo really has gotten so much better about the counter surfing, and this is a very rare sight to see nowadays.  So you've got to ask yourself, what's in the sink that's drawing her attention?


Would you believe that it's a can of black beans draining in a colander?  I feel that Doggo loves all sources of protein equally.

So what did I do with the black beans?  I made Boyhouse enchiladas (my version of one of the meals that Nicole made for me, which was originally an enchilada recipe).  I diced a sweet potato and sprayed it with oil and seasoned salt and air fried it for 20 minutes, and then roasted up a can of black beans and an orange bell pepper with the same seasoning for about 10 minutes, and then hit everything with a drizzle of lime juice.  I topped it with salsa and quickie guac (avocado mashed with onion powder and salt).  Now mind you, it would have tasted better at Nicole's house but it was still a great quick meal that made a ton of leftovers.  Doggo enjoyed a couple of the black beans and a few bites of sweet potato very much.


The next thing that we need to talk about is that SIL#3's garden is doing well, and she needed our help with her extra tomatoes and a cucumber.  Well, family is family and of course we pitched in.


I did a repeat of last year, which was to look at a recipe and totally wing it.  I threw the tomatoes on a sheet pan, added diced red onion that had been in the freezer for who-knows-how-long, a few garlic cloves, a dose of oil, and a sprinkle of dried thyme, salt, and pepper.


I roasted the whole kit and caboodle for about 40 minutes at 400.


I blended everything up and voila, it was the best pasta sauce the world has ever known.


Now how about that cucumber?  Well, thinking back to the BC trip, remember this gorgeous tofu bowl that I had when we went out to lunch?


You know I was dying to make my own version.  There is a base of rice, the cucumber, mango (thawed from frozen), avocado, air fried tofu doused in Trader Joe's sweet chili sauce, and a garnish of green onions and furikake seasoning.  Obviously the better choice is to go to BC and have lunch with Nicole, but the homemade imitation was very good as well.


The last thing to tell you is that life is simpler now that I'm cooking for two, but it's still for two people with wildly different taste buds.  I made half batches of two recipes for this week's dinners, which meant two servings of each so two nights of dinners in the new normal world.

And I got Recipe Tin Eats firecracker beef.  I would definitely make this again.

Workouts

When I got back from BC, the August heat was in full force for a few weeks.  And then everything calmed down and suddenly the weather is lovely.  That means the bike trail is back baby!  Hubs and I started riding a 100 mile bike trail in out and back sections last year, and left off about 30 miles from the end.  We finally got a chance to pick up where we'd left off.


It will take two to three more biking dates to finish it off.

The cooler weather also means that longer hikes with Doggo are back on the table.  When possible we try to meet up with SIL#3 and her dog.


Watching

Doggo continues to watch Hubs and me watch Seinfeld.  We're about five episodes from the end.


You might recall that when I was in San Francisco I did an Alfred Hitchcock walking tour and got to see several locations that were used in Vertigo.  I was dying to see the movie again, but never managed to find the time until I flew to BC and watched it as my inflight movie.  Apart from the scene at the Golden Gate bridge, the SF setting never really registered with me, but now that I've been there, SF is almost a character in the movie and I enjoyed it even more for that.

However, I have a nit to pick with the movie.  Without getting into spoilers, there is a situation that takes place at an old museum/historic site/church where things are not as they seem.  The thing that doesn't sit right after all of the museums and historic sites that I've been to in the past few years is that someone is always watching the visitors to make sure that they behave and aren't up to anything that they shouldn't be.  I know that they didn't have security cameras back in the day, but the idea that extra people could sneak in and do [whatever it is that is done in Vertigo] without the entire museum staff seeing them is laughable. C'mon now!

The last TV thing to talk about is that Netflix made all of my dreams come true and did a tell all on The Biggest Loser.  As if that wasn't enough Aubrey Gordon from Maintenance Phase gets to chime in!  Overall the documentary was a piece of trash but it was an interesting and highly entertaining piece of trash.


(Spoiler if you would like to do something else with three hours of your life - losing weight is hard, and losing a lot of weight in a reality TV setting is harder.  Jillian Michaels did not participate in the documentary, and conveniently she's the villain of the piece.  Look, I've got issues for days with Jillian but the claim that everyone else was a saint and had no idea what was going on just stinks to high heaven).

Reading

The only thing to tell you after the big book catch up from the last post is that I am further in to The Road to Tender Hearts and I have fully bought into the hype.  Folks, it's good.

Doggo is always happy to help with that, and she would like to pass on the life advice that you should keep your friends close and your tennis balls closer.

Phew, we are finally caught up!  See you next week for another round of the same ol', same ol' and then I will fall behind in blogging again because I'm headed to Nova Scotia to hang out with Elisabeth!!!

  1. I think your replicated dishes look great! I do love a good "bowl" of this or that and I often eat dinner with a spoon so anything that fits both of those criteria is pretty good in my book. I rarely have an oven and I definitely do not have an air fryer these days and I 100% miss my Instantpot, even more than the blender. I love that Doggo likes all food, except that of course can backfire on you! Has she gotten calmer? I don't know if you have done a proper dog update in a while!

    1. She is quite the adult these days. One example is that today she sleeps in a dog bed. When she was younger she was on a mission to eat the dog bed. With that said, she is a young and high energy dog, so when she has a mind to, she can get up to some mischief.

    Freedom really is in sight now - so exciting to think about having time for all the things you actually want to do. I'm so happy for you. How are you feeling about it all?
    Also love seeing a “Workout” section back. Amazing what cooler weather does. It's so nice that you can do some of the doggo outings with your SIL and her pup!

    1. I feel really good about quitting, and I will feel even better when I have an end date. You know it was very mature and adult of me to take a few years to think about it before leaving the rat race, but I get a feeling that once I am out I'm really going to wonder why I didn't do it sooner.

  3. YOU QUIT YOUR JOB. Phew. Who knew it was going to be so hard to finally do it. Hurrah. I'm so happy for you.

    Your food always makes me so hungry. I am a VERY basic cook, so I'm afraid you won't be getting anything fancy from my kitchen.

    That picture of Doggo in the woods on leash is just stunning. She looks majestic!

    And you're almost done Seinfeld. I'm always sad to get to the end of a sitcom. I get really attached to the characters and it's hard to walk away. The good news is I can always go back and revisit the series. And I forget plot lines so quickly that it's almost like watching it from scratch again ;)

  4. "Freedom is in sight!" Congrats on realizing what you want and then having the conversation!! I 100% agree about The Biggest Loser documentary; Jillian was not the only one accountable for how all of that went down and it was a big ridiculous to watch everyone else holding their hands up and saying "I tried to stop..." But, still worth a trashy watch if you like trashy documentaries - and, so worth seeing if you enjoy Aubrey Gordon (which I do)!

    1. I would watch Aubrey in anything. Hopefully we'll be hearing a lot more from her on the documentary scene, because she has a lot to say.

  5. Hooray! You quit your job! That is amazing! Last night I had a weird dream that I quit my job and took some part-time 20 hour/week job but that meant I couldn't retire as early as I wanted to. It was very odd.

    I've heard not great things about the Biggest Loser documentary. But yah, you can't place the blame on 1 person.

    1. I've had that dream! It is a very complicated process to go from accumulating money to spending it (you know, the entire reason that we accumulate it in the first place). I can't even tell you how much time I've spent in the past two years contemplating the 4% rule, knowing that I've gone from meeting to exceeding it, but still feeling like there's some snag that means that the rules are different for me so I won't have enough money after all.

    1. Yes! No more doing what everyone else wants me to do. I've been a good girl, and now it's time to start doing what I wanna do (full time that is. No more working a few hours every day when I travel and pretending that it isn't that bad).

  8. All I could hear in my head was the song that Hermey the Misfit Elf sings in Rudolph the Red Nosed Reindeer, "You can't fire me--I quit!" Awesome news.

    Love all the dog photos; sorry to hear about her black bean addiction. LOL Maybe wean her off by starting with kidney beans, then blackeyed peas, then navy beans.

    I'm also helping out with a tomato surplus: my sister constantly sends me urgent texts to "take more tomatoes off her hands." She's lucky I love them.

    1. Once I figured out that I could roast tomatoes then I suddenly became happy to help everyone with a garden. It was a game changer!

      I have no idea what is so appealing to Doggo about canned beans. But she is always welcome to have a few!

    Thank goodness for Doggo photos, I love seeing her.

    Excellent job on the enchiladas and the bowls, you all are eating well. We may have the enchiladas again this coming week, and then the bowl I made with the leftovers…2 meals, easy peasy.

    And gosh, the house is REALLY going to be all yours when you retire…wowee.

  11. Keep your tennis balls closer - words to live by. Your eats looks so darn good. I've never tried to go off grid like put tomatoes and purple onions and garlic in the oven and cook it and it makes a sauce? I feel I might need to count this as the thing I learned at the end of the month when Kryia asks. Hooray for walking away from the job. Commuting like it's 2019 made me chuckle. Well said.

    1. Well, the only reason I tried it is because I am the only person in my house who eats raw tomatoes so if I hadn't found a way to cook them up then they would have gone to waste since as one person I would never have eaten them all in time.

  12. Lots of good news here. I'm happy for you now that your job is in your rearview mirror. And the kids in college— wonderful. I'm sure you'll adapt to the empty nest just fine. I look forward to reading about your travels and meeting Elisabeth. You do get around blogland in real life. How cool is that!

    With the empty nest and your husband working from an office again... I think this means it's time for Doggo #2. Muahahaha!

    1. YES I FINALLY QUIT THAT STUPID JOB!!!

      Oh snap you're reading my mind. I want to travel for the next few years, so it's not the right time to get a second dog, but after that I would love to expand the family. Hubs is a one dog man, but I think that Doggo would love a sibling and if we had an age gap then we would never be without a dog. With that said...you know we would get another German Shepherd Mutt/rescue dog and that is not for the feint of heart. But then again the new dog would have a very mature Doggo to look to as an example so....

  16. Okay, I don't know how I got so far behind in reading and commenting. YOU QUIT YOUR JOB!!!!!!!!!! That's so, so exciting. So- you're still working until they hire someone else? What is the timeline here? I assume you won't be working on your trip to NS (which by the way is going to be the most epic trip of the year...) Anyway- lots of changes, sounds like it's all good. I'm curious to know how your husband likes working from the office? And do you miss the boys? Is the house too quiet?
    Anyway... those enchiladas look amazing. That would be an easy thing to make- maybe I'll do it next weekend.

    1. I will stay until they find someone else. Technically I do not have to, but there is no one else who knows how to run payroll and it's not something that's easy to train. Part of the motivation is work ethic and part of it is squeezing a few extra paychecks on my way out the door. My boss was talking a good game about them having some good interviews but I haven't heard if they've made an offer to someone yet.

      The NS trip falls between the processing time of the two big monthly payrolls, so there won't be a ton of work to do. I'll work for an hour or two a day to keep the trains running and that's it.

      All of the changes are good! The boys are happy at school and in particular it sounds like #2 is having the time of his life. I miss them but I also love seeing them flapping their little wings outside of the nest. In a perfect world I think Hubs would rather be at home, but he likes the work and his coworkers, and it was too good of an opportunity to pass up. I like having a little time in the house to myself, but 5 days a week is a bit too much of a good thing. He should be getting some WFH days pretty soon.
