Weekly Eats: I actually cooked this week edition

 A weekly roundup: eats, workouts, watches and reads.  I actually cooked this week edition.

As much as I love cooking and meal planning, there are times when it gets moved down on the priority list.  Specifically, for the past month when vacation, visiting friends, and other summer fun stole the spotlight.  This week started with a brief road trip and then brought us back home and to some good ol' home cooking: the stepkids cooked us dinner, I made an apple pie, there was a trip to Trader Joe's, and we saw an unforgettable movie.


Breakfasts
Monday: we did a quick overnight trip on Sunday, so our week started out of town.  We had a leisurely French toast breakfast.

Tuesday & Thursday: back to the grind with breakfast burritos

Wednesday & Friday: breakfast potatoes, salsa, avocado, and eggs

Saturday: a banana and UCAN prerun, a banana and protein powder smoothie post run

Sunday: avocado toast and bacon


Lunches
Monday: the last of the shrimp tacos that I made last week

Tuesday, Wednesday, & Thursday: I made a shrimp and black bean salad, which was very good on the first day and not very good after that, so it's not something I'm planning to make again.  With that in mind, I'll keep the recipe source to myself.

Friday: work catering

Saturday: a gang of us went to a friend's house for lunch.  Salad with grilled chicken, zucchini bread, and ice cream and blondies for dessert.

Sunday: veggie burrito with Trader Joe's guac

Dinners
Monday (family meal): fresh off our road trip, we wanted something easy.  Hubs decided to make it even easier by having the kids do the cooking.  Stepson #1 made the grilled cheese (and toasted them to perfection) and stepson #2 made the soup.  I could get used to this lifestyle.

Tuesday (family meal, dinner for two style): hubs and stepson #1 went out on the town to do manly things (manly = not my cup of tea and stepson #2 has a year to go before he meets the minimum age) so it was just the two of us for dinner.  I raided the freezer for meatloaf, mashed potatoes, and peas.


Wednesday (date night):  Flavor the Moment's One Pot Creamy Sausage Roasted Red Pepper Pasta which I've made before and adore.   I made two major changes, one by design and the other by accident:
  • I abandoned the one pot strategy and cooked the pasta separately.  The last time I made it, it took forever for the sauce to reduce and the pasta got overcooked - I can cook pasta and wash the extra pot in a fraction of the time.  
  • Oops I forgot to buy red peppers.  No peppers no problem, I just grabbed our perennially open jar of marinara from the fridge and used that and skipped the cream because I didn't feel like it needed it.  I also didn't add any extra water to the sauce and it was fine.


Thursday (fend for yourself night): snacks

Friday (date night): hubs and went out on the town for hamburgers.

Saturday (date night): another night on the town, another hamburger.

Sunday (family meal): we're getting together with SILs and cousins.  All signs point to spaghetti and meatballs.  I went back to my roots (a.k.a. my very first post) and made a Hungarian apple pie.


Meal Prep
On Monday I made another batch of breakfast burritos and the shrimp black bean salad.  Today I made curried beans and greens rice bowl for lunches next week. And by made, I mean set out rice from the freezer to thaw, spent 5 minutes getting the beans ready and put them in the oven as soon as the pie came out, and sauteed up the rest of the spinach in the bag from Wednesday.  That's what I call fast food.


Trader Joes's Haul Deets
TJ's specific staples: Bay Blend coffee, guac packs, bourbon vanilla, smashing smores, strawberry bites gone berry, cashew apricot date bites & blueberry almond peanut bites (so glad they had these, last time they were out, they're the perfect emergency "I Need to Eat NOW" snack to keep in your desk)
Everyday groceries: spinach, coleslaw mix, greek yogurt, protein bars, Italian sausage
New stuff to try: Kings of Prohibition wine (recommend), Cabernet pot roast, peanut butter & jelly blondies, Sunflower seed butter cups (for stepkids) chicken breast dog treats (for stepdog).

Workouts
25 miles of running for week 7 of 10 of this speed plan.  The end is near, which is giving me mixed feelings.  On the one hand I'm excited to move on and find out if I've gotten faster and on the other hand I'm really enjoying these workouts and the variety of them.
Monday: unplanned rest day.  We were traveling and it just felt right to blow off my workout in favor of time with the fam.
Tuesday: 5 miles total with 8 x 90 seconds speed/2 min recover
Wednesday: 3 easy miles that were anything but easy, my feet just refused to leave the ground
Thursday: 6 miles total with 4 x 6 min speed/2 min recover, weights at lunch
Friday: 3 easy miles that dragged by agonizingly slow
Saturday: 8 miles total with 10 x 1 min speed/1 min recover.  The last time I did this workout it was on the treadmill where 10 reps of anything feels ungodly long.  On the road the 10 reps passed in the blink of an eye.  It was one of those magic days where my feet never touched the ground, which was a welcome experience after Wed and Fri.

Watching

They Shall Not Grow Old.  This one has been on my radar since last fall and we finally had the chance to see it.  We knew that it was going to be good and it was. All I can say is that if you have the chance to see this...please do.

Reading
Not a lot of time for books this week, but I started what I think is going to be a good one, The Home for Erring and Outcast Girls by Julie Kibler.

    1. Thanks Kim! I don't know why but it never occurred to me to join in with the Run Down. I love reading along with everyone's fitness adventures each week. I'll give it a try this Sunday.
