Weekly Eats: Pirate's Eye Edition

A weekly round up: eats, watches, and reads.  This week I ran my first successful half marathon (how do you know if someone has run a half marathon?  Don't worry they'll tell you;-) but the side effect was that I totally ran out of ideas of what to eat all week long.  I learned that the secret to meal amnesia is to make grilled white BBQ chicken, pasta with meat sauce, and let your husband cook you pirate's eyes for breakfast.


Breakfasts
Monday: avocado toast

Tuesday and Thursday: breakfast burritos


Wednesday: cereal bar and string cheese

Friday: Homemade Egg McMuffin with bacon

Saturday: I think I got it right for my pre-half marathon breakfast.  Coffee and a banana at home, a Clif bar an hour before the start, and UCAN/Nuun half an hour before.

Sunday: Pirate's Eye!  For the life of me, I couldn't decide exactly what I wanted to eat, so I asked my husband to make breakfast for two.

Lunches
Monday, Wednesday, Friday: copped out and had lunch from work catering, nothing remarkable to show

Tuesday & Thursday: sweet potato, corn, and black bean enchiladas

Saturday and Sunday: I don't know what to call this besides a fridge cleanout quesadilla.  Flatout wraps/black bean dip/cheese/ salsa/avocado.  Another entry in the "I don't have a clue what to eat" category.


Dinners
Monday & Tuesday (family meals): heck yes, we made more white BBQ chicken!  I started fridge thawing it on Sunday, and mixed up the sauce first thing Monday morning and let the chicken finish thawing and marinating in the sauce all day.  I will say that it was just that much better last week when it had a full 24 hours to marinate, but it was still awfully good.

Wednesday (date night): Budget Bytes' Best Weeknight Pasta Sauce

Thursday (fend for yourself night): another fridge cleanout quesadilla

Friday (date night): I have no go to prerace dinner, so by default we went to our local Italian place for penne with vodka sauce with sausage.

Saturday (date night): unpictured Chipotle

Sunday (family meal): we needed to get out the door, so dinner was quick.  Adults had leftover pasta from Wednesday.  The stepkids would never do anything so weird as to put tomato sauce on noodles, so they had buttered noodles and chicken nuggets.

Watching
A very light week for TV, I caught the season premiere of How to Get Away with Murder and that's it.

Reading
I finally finished Snap Judgement by Marcia Clark.  ISO the next read.

  1. That's a great week of eats right there! I'm so jelly your hubby makes you breakfast. Mine couldn't cook his way out of a paper bag. :P

    1. For some reason my husband claims that he doesn't cook, but I have a ton of photos on this site that prove otherwise. My oldest stepson also makes an epic Pirate's Eye.

  2. Congratulations on your half marathon!! You have so many good looking eats. I've heard great things about Ucan but have never used it.

    1. It took me a long time to try it b/c of the price, though it goes on sale often. For the most part I only take it before a really long run or a race, but I really feel that it's a fool-proof way to make sure that I have a steady supply of energy.

  4. I had to laugh at the buttered boodles for the kids ;-) Buttered noodles were a staple in our house for YEARS (as were chicken nuggets LOL). My hubby likes to make breakfast on Saturdays, and I'm usually getting home (around 8:00ish) from a long run, so it's nice to have a meal made for me soon after I finish stretching, etc. Another great week of yummy-ness ;-)
