Weekly Eats: A Belated Pi Day Celebration

A weekly round up: eats, watches, and reads.  In this week's adventures, I have an incredible new favorite lunch to tell you about and I baked a pie the day after pi day.  March 14th was my long run day and my husband led a boy scout hike, so we were pretty wiped and we didn't have the kids that night, so we held off our pie celebration until we were all together on Sunday



Breakfasts
The usual fare of breakfast burritos, avocado toast, and cheesy English muffins.  My splurge of the week was air fryer french toast before my long run on Saturday.

Lunches
Monday & Tuesday: I spied two slices of veggie lasagna in the freezer.  Salads on the side.
Wednesday: soup & sandwiches at work

Thursday: last in office day, as my company is enforcing WFH until further notice.  Spinach artichoke pasta and a salad.

Friday: Sweet potato, black bean, and corn enchiladas at home.

Saturday: veggie burrito

Sunday: OMG in a bowl.  A.k.a Pinch of Yum's Spicy Sofritas Tofu.  But I didn't have the exact ingredients, and all of a sudden going to the grocery store is kind of a big deal, so as I often do, I made some substitutions.  No poblano pepper, no chipotles in adobo sauce...I did have some adobo seasoning that I threw in along with some frozen onions and pepper mix from Trader Joe's and I made sure to hit up the smoked paprika.  A full run down of what's in the bowl: the tofu, some air fried sweet potatoes, some leftover cilantro lime rice, and a Trader Joe's guac pack 👍👍👍
Some time ago I read a very snooty food blogger rant along the lines of "my recipes are the word of God and some people have the nerve to make substitutions" - I don't remember who wrote it and I laughed my way through it because that's exactly what cooking is supposed to be - you read the recipe for inspiration and then you do your thang.  But anyway, this recipe is wonderful, and I'm sure it would be even better if I followed the recipe exactly.  Tho I probably wouldn't go to the trouble to roast a poblano pepper over an open flame.

Dinners
Monday (family meal): we started the week without a plan, so hubs stepped up.  Costco panko chicken, chicken rice, and mixed veg.

Tuesday (family meal): the men in my life had rotisserie chicken, I made spontaneous fish tacos out of the leftovers from Friday's fish fry and some coleslaw mix.

Wednesday (date night): chicken parm, semi homemade.  I baked up the Costco panko chicken in the air fryer, and I could not have made anything better from scratch. 

Thursday (fend for yourself night): a fridge cleanout burrito.  Rice, refried beans, steak, cheese, salsa, and avocado wrapped in a tortilla and crisped up in the air fryer.

Friday & Saturday (date nights): when the kids are away, the adults will...eat things that adults love and kids hate.  Sloppy joes.

Sunday (family meal): grilled chicken, rice, and veg.

Duly Noted
Uses of air fryer this week: one billion
Uses of Instant Pot for two weeks running: zero.  I mean, we'll keep it but it's about to get moved down to the basement to free up counter space.


Grocery Shopping Report
The parking lot of our Costco was overflowing all week so we held off until last thing on Saturday to stock up and the store was surprisingly empty.  Sure things were picked over and there wasn't a single loaf of bread in the store, but if you are in the market for frozen cauliflower crust pizza Costco has your back.

Watching
So many movies...
  • Andromeda Strain (ha ha inspired by current events)
  • Hitchcock remake throw down!  The Man Who Knew Too Much 1934 vs 1956.  There's a clear winner and it's the 1934 version.  It's 75 minutes long and we sat on the edge of our couch for the last 74 minutes of the movie.  I couldn't find a trailer so here's the "chair fight" scene to make up for it (sorry not a fan of the 1956 version, IMO if you watch a clip of Doris Day singing Que Sera, Sera and do anything else with the two hours that you would have spent watching the movie you will be better off). 


  • For family viewing, Jurassic Park, which I had never seen before.  Though I have to give a plug for my favorite dinosaur movie:


Reading
Still working on The Sweetness at the Bottom of the Pie, still liking it a lot.

  1. Your comment about the snooty food blogger had me LOL'ing ;-) I'm not as crafty in the kitchen as you, but I seldom ever follow a recipe as written. I'm not a rebel, but I do believe in exercising one's creativity. As usual...everything looks delish!

    1. Thanks Kim! Most of my creativity is driven by necessity of not having a particular ingredient or not paying attention and missing steps along the way and having to fix things.

  4. Thank you so much for this. I'm glad you are staying healthy during this time. My husband and I go out to eat a fair bit and don't have a ton of good recipes, so we will try this!

    1. The sofritas tofu is awesome, actually every recipe I've ever tried on the Pinch of Yum site is really good, and really forgiving on my substitutions.

  5. My husband always says that a recipe is just a guideline! It's fun to embellish and make a dish your own. I'm going to look for that sofritas tofu.

    1. Exactly, cooking is like art, you do have to learn some rules and then you know which ones to break;-) I've had the sofritas tofu three days in a row for lunch now and I'm going to be very sorry when it's gone...oh wait no I won't b/c I'll probably make another batch right away.

  6. My hubby and I have been eating more meals at home now that all the restaurants are closed. I am going to give those enchiladas a try. I usually find a way to personalize a recipe too. Thanks for sharing!

    1. It's definitely been worth it. I got ours 100% for the price, it was on super sale, my only beef if that it's a little small. If I had it to do all over again, I'd get the one that Jen at Peanut Butter Runner has.
