Weekly Eats: Currently

A weekly round up: eats, watches, and reads.  I managed to stay ahead of the family dinner meal curve this week and tried an incredible new stir fry.

A Few Random "Currently" Notes

  • Seen in my neighborhood this weekend: the first Christmas decorations of the season (and no we have not taken our Halloween decorations down if anyone was wondering).
  • Apropos of nothing...I've started doing my hair again!  Which means a mid-morning work break to spend 10 minutes with a curling iron.  At the beginning of quarantine I stopped doing hair and makeup and have no plans to bring makeup back into the mix, not sure why hair is suddenly on my agenda again.

Let's talk food!

Breakfasts

An alternative to the endless stream of Clif bars that I've been eating recently.

 

Lunches

Monday: a veggie burrito from the freezer with some quickie guac (avocado on its last leg)

 

When I saw Cheap Lazy Vegan's 15 minute weeknight stir fry I couldn't quite imagine how Worcestershire sauce and chic peas would taste, but I was willing to invest 15 minute to find out (P.S. I'm not vegan but I am cheap and lazy).  My version was Costco stir fry veggies and a topping of wonton strips and fried onions.

Verdict?  OMG!  This is good stuff.  You can't even begin to imagine it until you try it.

And toward the end of the week I brought back the "salad" bowls...rice, roasted sweet potatoes, air fried tempeh, veggie slaw mix, avocado, and Bolthouse Farms dressing with some tortillas to help scoop it up.  And oh yes, the glass topped table means that it was nice enough to eat outside a few days this week.


Dinner

Monday & Wednesday: leftover baked ziti.


Tuesday: leftover meatloaf from the freezer.  We also had two twice baked potatoes leftover in the freezer that went to the kids, I made some mashed potatoes for the adults.


Thursday: I think this may be my all time family dinner...grilled cheese and tomato soup.


Friday: pizza for takeout night


Saturday: family party at my SIL's.  They made hamburgers, we brought wine and chocolate chip cookies.

Sunday: it's been too long since we had steak!  I can't change the past but I can change our present.  The kids had leftover rice and the adults had the leftover mashed potatoes.


Watching

More Queen's Gambit, more Married at First Sight...the combo of a legit "good" show and a trashy reality show just can't be beat.

Reading

Finished The Girl from Widow Hills by Megan Miranda.  Hella good book.  I've got eyes on a couple of titles for my next read, I just need to pick one and start turning pages.

  2. Hooray for eating outdoors! Nice.
    My favourite this week is the baked ziti.
    I use a curling iron as well - but it only makes it's appearance once or twice a week, compared to every day pre-Corona.
    I started reading "Alive", a real-life story of a Urugayan rugby team that crashed in the Andes with the plane in 1972. It's captivating. To survive, they had to do the unspeakable... (there were some corpses).

  4. Oooh, air-fried tempeh! What's your secret? It looks fantastic!

    1. Oh man, it's so easy...slice up the tempeh, spray with oil, sprinkle with seasoned salt, air fry @390 for 15 minutes, and enjoy!

    2. I had that one coming to me! Thanks for the recipe! (Although, honestly, knowing the temp is super-helpful, so thanks for that!) I've always just heated it on the stovetop, for some reason never thinking air fryer. That's where I do my tofu, though so...
