Weekly Eats: Instant Pot Pot Roast Edition

A weekly roundup: eats, watches, and reads.  In this week's edition, I made instant pot pot roast (I've tried but no matter what that phrase sounds strange: instant pot pot roast, pot roast in the instant pot...just can't lose the 2nd pot), went to Trader Joe's, and like everyone else on the planet, binged Love is Blind.

Breakfasts
Unpictured avocado toast, cereal bar/string cheese/fruit, cheesy English muffins, and of course breakfast burritos.

Lunches
I lived off of last weekend's cooking spree and alternated between Sweet Potato, Corn, and Black Bean Enchiladas and Spinach Artichoke Pasta.  It was good to have the old favorites back in the lunchbox.

A weekend feast of a BBQ chicken quesadilla and cole slaw mix.

Dinners

Monday and Tuesday (family meals): leftover tacos

Wednesday (date night): grilled flank steak, portabello, zucchini, and mashed potatoes

Thursday (fend for yourself night): a random tofu/udon noodle stir fry that was lingering in the freezer.

Friday (date night): quickie shredded BBQ chicken via the instant pot and air fryer fries.

Saturday (date night): when the weather is cold, I keep it hot.  Pinch of Yum's Instant Pot Pot Roast...just yum.  The variables that I was working with: I forgot to buy mushrooms and only had one tablespoon of tomato paste, dried instead of fresh herbs, and I had an underweight roast + a few extra potatoes to even it out, and FWIW the recipe says 2-3 cups of broth and I used 2 and felt like I had plenty of gravy.  We'll be making this again.  In fact, I'd be good alternating between flank steak and this for dinner for a good long while.

Sunday (family meal): Gimme Some Oven's Japchae.  We haven't had this in a long time and I knew that the boys would be all over anything with soy sauce.

Meal Prep
Leftover pot roast, japchae, and shredded chicken.  I also made another batch of breakfast burritos.

Trader Joe's Haul Deets
I hadn't been in a long time, and it was like the universe was welcoming me back because they have the frozen fire roasted peppers and onion mix again.  Picked up steak, roast, veggies, guac, avocado oil, and tzatziki sauce.  RIP Joe.

Watching
One of my coworkers got us all tuned in to Love is Blind and I binged the whole thing this week.  It's basically Married at First Sight in reverse.  I think it's fair to say that we all enjoyed this show way more than we should have but oh mercy I am burned out on watching reality TV weddings. (P.S. the hubs and I did not get married at first sight and since we both used accurate pictures for our OK Cupid profiles, we didn't go into things blind so I have no explanation or defense for why I enjoy these kinds of shows so much)

Reading
I took my time with Long Bright River and it was a good one, all the thumbs up.

  1. oh that 2XPOT Roast (that's my version LOL)! Looks delish...I think I could eat that for a week, or even eternity...

    1. I know, I stress out so much over meal planning when really we would be perfectly happy eating this for every meal.
