Weekly Eats: Ugly Cookies

A weekly round up: eats, watches, and reads.  This week we took a problem and made it into an ugly (but delicious) solution.

My stepsons' breakfast and snack of choice is Chocolate Frosted Mini Wheats or "choco" as it's called in our house.  At the bottom of every box of choco is a mass of shredded wheat flakes and for years we've been saying that we should find something to do with the crumbs.  This week we actually followed through and made chocolate chip "choco" cookies.
The result is a really ugly cookie, but the boys have been chowing them down.  I don't want to share the recipe I used, since I'm less than satisfied with the big melty mess that these cookies turned in to, but we'll keep experimenting.  Or just continue to make ugly cookies, nothing wrong with that.

Breakfasts
See any previous week, I was out of breakfast burritos and finally restocked my supply this weekend.

Lunches
It seems like only want to eat tacos for lunches these days, and it ain't broke so I'm not planning to fix it.  Typical ingredients/recipe: heat up some refried beans and Trader Joe's fire roasted peppers in the microwave, spread it on a tortilla.  Mix in some leftover dinner meat (ground beef or streak).  Top with cheese and heat up in the air fryer for a minute.  Add sour cream or avocado & salsa, roll up the tortilla and crisp up the exterior for a few minutes.

Dinners
Monday: leftover Easter dinner

Tuesday: tacos!

Wednesday: How Sweet Eats Korean Chicken bowls.  The "I tried" meal of the week.  I skipped the coconut milk and coconut water in the rice, just mixing in a little bit of coconut oil.  TBH I've never quite gotten the hysteria over coconut rice.

Thursday: leftover palooza!  The kids had tacos, I had a Korean chicken bowl, and hubs met everyone in the middle by making a chicken taco.

Friday: pizza for our mandatory take out night.

Saturday: mandatory hamburger and fries night;-)

Sunday: leftover cleanout.  The kids finished off the pizza, hubs and I retrieved the last of the enchiladas from a few weeks ago from the freezer.  We baked them up in the air fryer and they came up as good as new.  TBH...I kind of only want to eat enchiladas for dinner for a while.

Oops
We missed our mandatory steak night this week.  We'll just have to do better this week.


Watching
All the movies!
  • Spies Like Us.  I need a moment to mourn my childhood, somehow I never knew about this movie, sigh it was before the internet and my parents limited my TV time (I was about to say screen time but we didn't call it that back then) so I had no way of knowing about it.  I was such a huge Chevy Chase fan and would have adored this movie so much back in the day.  As it was I enjoyed it, it was nice and silly.

  • I have lost count of the number of people who recommended Knives Out to me, and now you can add me to the list of people who have recommended it to you.

  • And of course I had to dip into something from the old school.  Got my Garbo on with Flesh and the Devil.


Reading
Finished The Far Country, just need to say again that I loved that book so much the first time I read it when I was 12 and how much I love it now on the umpteenth reread.   Now what to read next...I'm feeling some Lisa Jewell.

    I haven't heard of "Knives Out" at all. That'll be the next thing for me to watch, once I've finished Unorthodox. Thanks for the tip!

  4. Ooooh, I'd like to see the recipe for the ugly cookies ;-) I used to save cereal crumbs all the time (from various cereals) and use it as a "crunchy" additive for muffins or breads. I never thought of adding it to cookie dough.

  7. We make tacos a lot AND we've been using our new air fryer a lot! I never thought about putting the tacos in the air fryer! That's genius!

  8. I just added fire roasted peppers to my TJ's list. Thanks for the reminder that I've been out of them for a while and had forgotten to buy more.

    Just like hole-in-the-wall restaurants are sometimes the best finds, ugly cookies can be some of the most delicious!
