Weekly Eats: the Return of the Sofritas Bowl

A weekly round up: eats, watches, and reads.  This week saw the return of my beloved sofritas bowls, my continued struggles with getting dinner on the table, and some old favorites in the movie and book departments.
 

Breakfasts

Leaning heavily on the side of homemade Egg McMuffins, and a rare scrambled eggs and toast breakfast.

Lunches

I got around this week.  First up, leftover spicy peanut noodles.

On Friday when I ran 11 miles in the morning, I didn't have much of an appetite afterwards, but knew that I needed to eat.  A PBJ & potato chips fit the bill.

And this weekend I made up a batch of Pinch of Yum's Spicy Sofritas Tofu, which I haven't had in a while but heads up I missed it so much that I'll probably be making it on repeat for lunches for the next few weeks.  I air fried the tofu for a bit longer at a lower temperature and the texture came out restaurant quality.  I further pushed the envelop by not cooking the tofu in the spicy mixture.  I figured that since the tofu was already cooked and that a brief warmup in the microwave would do the trick and sure enough it did.  The contents of the bowl are: roasted sweet potatoes (hiding under everything else), rice, refried beans, softritas, cole slaw mix, and avocado.


Dinners

Monday: was a much appreciated holiday.  I don't really take time off work anymore, you know?  It was also a dreary, stormy day that kept us housebound (hey it's not like we were going anywhere else but it cut into our dog walking time).  When it became dinner time a batch of chili mac fit the bill.  BTW, the kids went through a spell where they despised chili mac and they seem to have gotten over it.  A batch used to feed us for a couple of meals but now it gets up one full meal plus about two portions of leftovers.

Tuesday: Costco orange chicken & eggrolls.

Wednesday: leftover cleanout, adults had chili mac and kids had orange chicken.

Thursday: I cannot catch a break with my work schedule vs my family's schedule on dinner.  My work is very flexible on start time but not so much on end time.  The kids' extracurriculars are earlier now because "everyone's at home".  End result: my husband has more control over his afternoon schedule and I like being cooked for just as much as I like cooking.  Chicken parm via Costco panko chicken via the air fryer.


Friday: I had a wicked pizza craving but it's not all about me so I asked the rest of the family what they wanted.  Everyone piped up "PIZZA!!!" so great minds were thinking alike.


Saturday: burger night!


Sunday: flank steak, mashed potatoes, and broccoli.


Crushing Hard On

All of the Oktoberfests!  Great Lakes is always a favorite and now Bell's has one as well.   I also tried Sierra Nevada and Thirsty Dog, just single bottles that I got from Trader Joe's.  I think that Thirsty Dog might be my favorite but more testing is needed😀

 

Watching

Ugh I have given up on Netflix for the time being.  I'm working my way through my home library of old movies.  I hit up Mae West: Night After Night, She Done Him Wrong, I'm No Angel (<<==if you only have time for one I think this will give you the most one-liners for your buck). and My Little Chickadee.

Reading

Yeah, I ended up not being able to get into the book that I started last week, so I turned to an old favorite.  Many years ago I went through a phase where I didn't read much fiction, and what got me out of that was that everyone I knew was just crazy about a book called What Alice Forgot.  It was my first semester of grad school and I really didn't have time to read but my goodness I made time for Alice and it got me back on the fiction train.  I don't reread very many books so I'm not sure why it popped into my head but it is a welcome return to an old friend.

  1. Well done for running 11 miles on Friday! I think if I had crisps in the house after such a long run I would eat the whole packet.
    I love the Chili Mac! Is that with sour cream?

    Ah, "Oktoberfest"! Strangely, I haven't seen anything round here yet on that theme. I guess because they cancelled it in Munich we are lacking the festival vibes here.

    I'm going through a non-fiction phase right now... I have three books waiting for me. I've just started "Atomic Habits" by James Clear. Fascinating!

    1. Yes that is 100% positively sour cream. The kids think it's weird. I read Atomic Habits a while back, it's a good one for sure. Though I don't remember much about it now so it's probably time to revisit it.

  2. That Chili Mac. Yum. I never think to make that, but I do make chili often in the cooler months. I saw a thing on GB for an OctoBeer Fest Ride...it looks fun!

    1. Funnily enough our family tradition is to have chili mac in the summer when we go on vacation, I think because it's so easy to make. And it's great on a cold night as well.
