Weekly Eats: Feeding the Fam

 

A weekly round up: eats, watches, and reads.  In this week's saga, I managed to stay one step ahead of our crazy schedules and feed my family, I watched a lotta reality TV, and I have a definite position to take on the book that I wasn't sure about last week.

Breakfasts

A lotta Clif bars and coffee for running mornings, here's a token avocado toast on a non-running day.


And oooh looky looky what have we here...the long absent breakfast burrito is back on the scene.  Both as a second breakfast and as a lunch.


Lunches

This wasn't one of those weeks where I had the same thing for lunch every day.  I had a serving of tofu sofritas left over from last weekend's meal prep, which found itself in a bowl with rice, roasted, sweet potatoes, coleslaw mix, guac, and fritos.

And oh that's right I restocked the freezer last week so I had a serving of spinach artichoke pasta at my beck and call.


And there was a day when it was warm enough to work in what I've come to call my "Friday office", a.k.a the backyard.  Leftover salmon bowl from the night before (I've found that air fried fish holds up very well for leftovers, I barely reheat it in the microwave and we're good to go).


Dinners

Monday through Wednesday we feasted off of tacos.


On Thursday we had salmon bowls (air fried salmon, rice, Costco stir fry veggies, avocado, sushi ginger, wonton strips, sesame seeds, and this dressing minus the wasabi).

Friday (date night): we went out on the town...okay, okay, we went to the drive in hamburger place.  And then we returned home to a romantic candle lit evening courtesy of a power outage. 

Saturday (single girl night, goody two shoes style): baked sweet potato loaded with garlic powder and lite butter, Trader Joe's chicken sausage, peas.  While dinner was cooking I roasted up some more sweet potatoes in the air fryer to replenish my freezer stock.  BTW, lite butter is about the only low-calorie food that I've stuck with over the years.


Sunday: Shepherd's Pie!  Formerly this was an adults' only meal but now everyone in the house is a fan.  My oldest stepson has a strong aversion to mashed potatoes, but for some reason they are acceptable in Shepherd's Pie...I don't know "why" but I will take it...hey I have plenty of my own "food" things.  Also formerly this was enough food for two meals but with growing kids that's no longer the case and the leftovers are scant.


I've had a wicked apple crisp craving lately and I scratched the itch via PB Fingers.  Note to self, double the recipe next time.


Watching

All done with Fit to Fat to Fit.  I watched more of Married at First Sight that I care to admit, even in this space (my standard disclaimer is that I got Married at Ten Thousandth Sight and although I like to think that I'm a good sport, I do not think that I would do well on that show...or any reality show really).

There's still nothing grabbing me in the world of "real" TV.

Reading

When we left off last week, I was getting toward the end of Mexican Gothic and I was at an odd place with the book.  I'd loved it but the story had just gotten so weird that I wasn't sure if I was going to finish it.

Final verdict?  I'm giving this one a thumbs up with the caveat that I didn't buy into the underlying "thing".  Overall it was a great book with a satisfying ending.

Currently reading: The Last House Guest by Megan Miranda.  I've heard good things about this author and picked it by virtue of this being the only title of hers that was available for Kindle from my library.  At first I wasn't that in to it, I mean it was good enough but not really grabbing me...and oh things turned and I am now Very Into It.

  1. I love shepherd's pie! I haven't had it for years. I also love your Friday office. Warm autumn days are the best.

    I have started watching "The Queen's Gambit" on Netflix. It's a story about a young orphan girl who is a talented chess player. Fascinating! I'm only 4 episodes in, so let's see if it stays good.

    Great that "The Last House Guest" has turned into a gripping book! I have started "Tell Me More" by Kelly Corrigan. It's alright - I find her non-stop witty writing style a bit tiring.

  2. How could anyone shun mashed potatoes??? Of course, I grew up eating potatoes for almost every evening meal, so there's that LOL Since I was treadmilling a few of my walks last week, I took the opportunity to re-read a few (somewhat) recent issues of Runner's World. One was from last Fall, and had the "best 2020 races to run" featured. I think maybe only one of said races actually held because it happened in February.

    1. Ha ha, it's an "honest" food aversion...he got sick while eating them when he was a young 'un. I've tried to get over some of my life long food aversions, and it's really hard. I'll eat boneless chicken breast and sometimes like it but if it's any other part of a chicken or there's a bone involved...eek I just can't do it.

      Sniff on 2020 races. I can't keep up with all of the running podcasts that I listen to in real time, so I've been hearing quite a few 2019 episodes lately and it's heartbreaking to hear about plans for Boston, etc.

  5. Have you had the new Coffee flavored Clif bars? I recently had the Vanilla Latte and it was amazing! Your food pictures always look so good!
