Weekly Eats: Mon July 16 to Sun July 22


A weekly roundup: eats, workouts, watches, and reads.  Garden eating and step kid vacation edition.


The stepsons headed off on vacation with their mother this week, so hubs and I had some extra dates, stepdog got some extra walks, there was a Trader Joe's haul, and the garden provided a lot of our food.

Weekday Breakfasts
  • Avocado toast x2

  • Breakfast Burrito x2

  • The return of the homemade Egg McMuffin!  This one with chicken sausage.


Weekend Breakfasts
Saturday: scrambled cheesy eggs with chicken sausage and English muffin

Sunday: homemade Egg McMuffin with bacon


Weekday Lunches
No surprise here, all salads all the time.

Weeknight Dinners
Monday (family meal): We had four people but only enough leftover chimichangas to feed three.  Easy answer, hubs and kids had the chimichangas and I had a veggie enchilada from my freezer stash.  Everyone had cilantro lime rice on the side.



Tuesday (family meal): Our neighbors invited us over for dinner!  Grilled brats and corn, baked beans, an orzo salad, and cherry cake for dessert.

Wednesday (date night #1): Bacon chicken ranch burgers and fries.


Thursday (fend for yourself night): hubs had a frozen chicken burrito (homemade), I had a Trader Joe's Sriracha Shrimp bowl.

Friday (date night #2): Chicken Basil Fettuccine - recipe via Blue Apron, ingredients via me.  Salads on the side with garden fresh cucumbers and cherry tomatoes.


Weekend Dinners
Saturday (date night #3): out on the town.  Sirloin for hubs, bacon cheese burger with sweet potato fries for yours truly (as you will soon learn, I ran 8 miles that morning and inhaled every bite).

Sunday (family meal): the steps are back! We raided the garden for cucumbers, tomatoes, and dill.  Ina Garten's tzatiki + Gimme some oven souvlaki.

The good: I prepped everything in the morning so that all we had to do was put the chicken on the grill, chop veggies, and bake fries.
 
The bad (well not the bad, just the predictable): the boys wanted nothing to do with the tzatziki.  Not even when they were told it had cucumbers and dill, which are two of their favorite things.  After stepson #1 turned it down, stepson #2 had a scoop of it to spite him and said that he liked it.

The takeaway which really I already knew: when it comes to foods that they boys aren't familiar with, if I have them help with the cooking they will almost always eat it.  But if they aren't familiar with it + didn't have any role in cooking it = no reason to try it.

Workouts
Monday: weights and 1.75 mile treadmill run
Tuesday: 5 mile outdoor run.  Even at 6AM, it was humid and miserable but I got it done
Wednesday: Off
Thursday: 4 mile treadmill interval run
Friday: weights and 1.75 mile treadmill run
Saturday: 8 mile outdoor run followed by a one mile cool down walk with stepdog
Sunday: Off!
 
Watching
(From the treadmill): How to Get Away with Murder and sniff, I finished A Place to Call Home for now.  There's another season coming out next year.
(From the couch): Halt and Catch Fire (just started season four), Unbreakable Kimmy Schmidt, MST3K.

Reading
Finished Dover Goes to Pott by Joyce Porter. Next up: Big Little Lies by Liane Moriarty.
