Weekly Eats: Mon Apr 23 to Sun Apr 29





A weekly roundup: eats, workouts, watches, and reads.  5k edition.


Weekday Breakfasts (a.k.a The Usual Suspects)

Avocado Toast
Breakfast Burritos
Cereal bar, string cheese, and fruit al desko.


Weekend Breakfasts
Saturday: Homemade Egg McMuffin with Bacon

Sunday: an ultra rare weekend Breakfast Burrito.  My go-to race day breakfast.


Weekday Lunches
M: Trade Joe's run/snacks.
T,W,F: The hybrid of Chrissy Teigen's Drunken Noodles and Gimme some oven Korean stir fry that I made last weekend.   This was everything that I wanted it to be.
H: Spinach Artichoke Pasta


Weekend Lunches
Saturday: Wedding shower for one of my besties.  Egg salad on croissant and ice cream for dessert
Sunday: California Pizza Kitchen Pizza Margherita Flatbread

Weeknight Dinners
Monday (family meal): leftover flank steak and scalloped potatoes from last Sunday.

Tuesday (family meal): odds n'ends.  Kids had nuggets and mac n'cheese, hubs had chicken noodle soup, I had Spinach Artichoke Pasta.

Wednesday (date night): Chicken and Basil Fettuccine Pasta!  I've been reading through the archives of Hungry Runner Girl and this was a Blue Apron recipe that she made for a sponsored post.  My non-sponsored/non-Blue Apron customer opinion: this is good food and will be going on our rotation of staple meals. 

I don't have any interest in getting meals from Blue Apron because our schedules are flaky and I like being able to cook what I want when I want without being locked into a fixed menu.  But I do enjoy reading about other folks' experiences with the meals and I really appreciate them for putting their recipes online.  The recipe was for two servings but we got three very generous portions out of it.

I've had a craving for carrot cake for awhile, so I also made some carrot cake bars, but they weren't very good, so I'll keep the recipe source to myself.

Thursday (fend for yourself night): hubs found some baked ziti in the freezer,  I had the last serving of pasta from the night before and it reheated beautifully (I'm always nervous about reheating chicken).

Friday (date night): The Mexican restaurant where we had our first date. 

Weekend Dinners
Saturday (low key date night): We wanted something quick and didn't want to go out, so I headed for the freezer for some Trader Joe's Broccoli Beef Stir Fry and Costco veggie egg rolls on the side. 
This was our first time trying it and I think the last.  It was just OK.

Sunday (family meal): Lasagna!  The last time I made lasagna, I ranted a bit about how precooked noodles don't fit a 9"x13" pan.  I wanted to shout out that the brand I used tonight was a much closer fit than the ones I used before.

Meal Prep
Minimal since we have lasagna for days and plenty of breakfast burritos.  Needed something to patch in the holes, so I made half a batch of Cafe Rio Copycat Crockpot Chicken.  Another recommendation found somewhere in the archives of Hungry Runner Girl.  

Other

Workouts:  I ran a 5k on Sunday, so I ditched Friday weights for a run and took Saturday as a rest day.

On Sunday morning it was freezing, barely over 30 with a bitter wind, but lots of sunshine.  Of course I wish that magically turn into a faster runner already but hooray for the pace on mile three!

My next 5k is...wait for it...next Saturday.  I ran today's race because my work covered the entry fee and next week's race benefits a family member's school.  Next week's goal: run faster than today, and crush the last 10th of a mile.

Watching (from the treadmill): A Place to Call Home

Watching (from the couch): Brooklyn 99 and Ash vs Evil Dead on date night.  Both shows are nearly done with their seasons and Ash isn't being renewed, so we brainstormed for new shows to watch.  We ended up with Halt and Catch Fire (not sure if I've ever mentioned that hubs is a computer programmer?) and Unbreakable Kimmy Schmitt.  Kimmy is a rewatch for me, hubs saw a few minutes here and there when I saw it the first time.  I rarely watch a TV show more than once but I'm loving the 2nd time around with Kimmy.

Reading: Reread an old favorite, Dover and the Unkindest Cut of All and started The Alice Network.  Early impressions on Alice: I'm hooked and if it wasn't for adult/family/work stuff I'd be reading right now.
