Weekly Eats: Chili week

A weekly roundup: eats, watches, and reads.


Breakfasts
Monday and Friday: avocado toast

Tuesday and Thursday: breakfast burritos

Wednesday: Clif bar, string cheese, and fruit

Saturday: homemade Egg McMuffin with bacon

Sunday:  eggs, cheese, and salsa in a tortilla


Lunches

Monday, Wednesday, and Friday: lunches from work catering, nothing special.

Tuesday: salmon bowl (air fried salmon briefly reheated), rice, avocado, sushi ginger, Costco stir fry veggies and  Skinny Taste dressing.

Thursday: Although I'd actually prepared two salmon fillets last weekend, it occurred to me that 5 days is probably too long for cooked fish to be kept in the fridge, so I sadly let it go.   My consolation was that against all odds I still had one last portion of sweet potato enchiladas in the freezer.

Saturday: speaking of against all odds freezer finds, I still have a few veggie burritos tucked away.  I had half an avocado on hand to make quick guac on the side.

Sunday: late breakfast/early dinner + snacks

Dinners
Monday (family meal): the picture does not deceive, that's a tiny portion of roast beef and roasted potatoes leftover from Sunday.  That's the price of being the last one home but I'm very happy that it's a meal that everyone will eat.

Tuesday (the family meal that wasn't): late night, snacks at work

Wednesday and Thursday (date nights): I'd thought about making steak, but it was a chilly rainy day and the thought of going outside to grill wasn't appealing.  A big batch of chili mac, now that was appealing and weather appropriate.

Friday (single girl night): the men in my life went to boy scout camp and I wanted something easy and found it in I am a Food Blog Two Ingredient Herby Garlicy Pasta.  The two ingredients are penne + boursin cheese.  It's good and easier than easy, but it's kind of begging not to be a two ingredient meal...I can see artichokes and spinach and all kinds of goodies working there way in there.

Saturday (single girl night): a quickie kinda pizza like deal...flatout wrap with pesto and cheese

Sunday (family meal): taco night!  Our standard "yay everyone survived boy scout camp" meal


Watching
From the treadmill: loving season 3 of Glitch

From the couch: I wanted more Hitchcock and got it with Psycho.  I think it's been "long enough" since I've seen all of these movies to justify a rewatch all around.



Reading
Kinda in a dry spell.  I finished the book I'd been working on for a few weeks, it started good but I just didn't get into the characters so it ended up as a "meh" for me.  ISO the next read.

Audio book wise, I finally heard Deena Kastor's Let Your Mind Run and now I'm listening to 26 Marathons...good stuff there.

  1. I haven't made any chili yet this season. That needs to change. A sweet potato enchilada sounds so good. I haven't seen Psycho in AGES! Fun!

  2. That penne with boursin looks so good! I agree that's the issue with a lot of two ingredient meals, they would be even better with other stuff. But it's good to know that they're still an option for when you're in a rush and don't have many fresh ingredients on hand.

  3. We've had chili a few times already because...it's chilly! Lol. I like Psycho but personally the scariest movie to me is Deliverance. Yikes!

  4. I love chili! It's one of my favorite things to make. I use either the Crock Pot or the Instant Pot and its amazing. I made pulled pork in my crock pot today. Easy peasy!
