Weekly Eats: A Temporary Return to Normal



A weekly roundup: eats, watches, and reads.  The story of a bittersweet return to normal life.


There was no social distancing in my extended family this week.  Between being with my FIL on his his final day and moving his belongings out of assisted living, everyone breathed on everyone else and there is no germ that our tribe has not shared in the past week.  Knowing that we would be together for the funeral this week, we took advantage of the situation with a Cinco de Mayo/pre funeral party, the funeral/family lunch/family dinner, and a family party this weekend for a certain stepson.

What is a funeral like in socially distanced times?  Pretty much the same as a non socially distanced funeral. There were no calling hours and the service and cemetery gathering was limited to immediate family and a few friends.  My FIL hated being the center of attention so he would have appreciated the scaled back audience.


Breakfasts
Lol, I just haven't been in to taking pictures of my breakfasts for a good while now.  The same old breakfast burritos on heavy running days and fruit/cheese/cereal bars on lighter workout days.

Lunches
Same old same old here as well...variations on a taco or a taco bowl.  Rice, roasted sweet potatoes, avocado, and sofritas tempeh, and fritos.

Dinners
Monday: ooh look I cooked for my family on a weekday...this is Chicken and Basil Fettuccine, a Blue Apron recipe made with my own ingredients. Never have we ever gotten a Blue Apron delivery, but I've found some good recipes from them.  My big money saving tip with this one is to skip the Mascarpone and just use cream cheese instead.

Tuesday: we had a pre funeral Cinco de Mayo party at one of my SIL's.  We brought guac, they brought tacos and margaritas.

Wednesday: funeral dinner at our house.  My SIL's were given a lot of food by family friends so we divided it up between family lunch and family dinner that day.  Our dinner menu centered around ham sandwiches.

Thursday: leftovers!  We had chicken from Sunday and a bunch of rice in the freezer, add a pinch of cheese and suddenly everyone has burritos.

Friday: mandatory take out night c/o the Lebanese place. I got a shawarma pizza.

Saturday: a certain stepson's birthday party!  We grilled up hamburgers and of course there was ice cream cake.

Sunday: leftover night, finished off the chicken pasta from Monday.

Watching
Jungletown on Youtube (free Youtube not subscription Youtube).  Kinda sorta along the lines of Fyre Festival.

Something that I never imagined I would have any interest in seeing...Rocky! 

And finally, on the birthday party night we saw the PG-13 version of Deadpool. 


Reading
Still working on The Third Wife by Lisa Jewell.  I just not having a lot of luck finding time to read these days.

  1. I think your FIL would have been happy to know that he contributed to so many family events in a time of physical distancing!
    Good for you to turn it into 3 get-togethers. Actually, can you make it 4? Did your family add in a little Mothers Day for you, too?
    I liked all the Rocky films! Jungletown sounds interesting, thanks for the tip.

    1. Nah, I'm the stepmom, and stepmother's day is every day that we spend with the boys. I've seen so many clips from Rocky, just never the full movie. I'd be interested in seeing more.

  2. That's a good tip on the cream cheese instead of marscapone! I had never thought about that. I've never seen Rocky either. Did you like it?

    1. Hey I think the chicken pasta would be really good with TVP or another veggie substitute in place of the chicken. I'm not a fan of boxing but Rocky is more about the athletic process and he's a runner, so yes it was a good watch.

  3. I'm sorry for the loss of your father in law. I feel for those who are having funerals during this time.

    There was a Rocky marathon on TV and I got sucked in - I had never seen it before but I really enjoyed it. I still need to see Creed 2!

  4. I had to smile when you described the "Cinco de Mayo/pre funeral party". What an unusual combination! :) I am so sorry for the loss of your FIL. Glad your family could get together for his funeral. Why am I always hungry after I read your posts? :)

  5. I agree with Laurie's comment about the Cinco de Mayo/pre-funeral party. Not an ideal situation, but you did make the best of it, all things considered. Gosh, it's been years, like pre-husband (?) since I've seen a Rocky movie. I did get to run the steps of the museum (ala Rocky) when I was in Philly for the RnR 13.1 (Oct. 2018), and that was SO COOL!

  6. I'm glad you were able to get together with your family to say farewell to your father-in-law.

    Happy belated birthday to your stepson. My oldest always asks for an ice cream cake as well. As always, all of your food looks yummy!
