Man breakfasts have gotten boring around here lately! I'm truly just taking in fuel to run.
The salad thing...I started the week with shredded buffalo chicken....
And quickly got bored to tears with it. A little chicken goes a long way sometimes. Switched it up to fake sushi bowls inspired by Budget Bytes (P.S. I was in a goody-two-shoes mood and mixed sriracha into low cal salad dressing but if I had it to do all over again I would have made the sriracha mayo in the original recipe).
Monday: Child labor night with grilled cheese and tomato soup
Tuesday: steak night with grilled portobellos and zucchini! I raised my little finger to make the mashed potatoes and hubs did everything else. The kids each tried a bite of portobello and said that it was good but declined the offer of a second bite...baby steps.
For dessert stepson #2 made his specialty, the brownies from Mark Bittman's How to Cook Everything.
Wednesday: mismatched dinner night. Hubs grilled chicken up for him and the boys, I made a salmon bowl (air fried salmon, rice, Costco stir fry veggies, avocado, sushi ginger, a tiny dab of wasabi, and the dressing from Skinny Taste)
Thursday & Friday: chili mac! If you're keeping score, this was the first time that I cooked family dinner all week.
Saturday: unpictured Chipotle
Sunday: I stepped it up for father's day. Steak kebabs with cilantro lime rice for dinner and a cookie cake for dessert. Disregard my cake decorating skills, not for the first time I sure am glad I have the ol' CPA license to fall back on.
Dinner was followed by a family game of Throw Throw Burrito (by the Oatmeal Guy, the same genius behind Exploding Kittens and Bears vs Babies). Picture taken after my surprise win of the first round. I didn't maintain my lead for very long. When it comes to family games the phrase "if you're the smartest person in the room you're in the wrong room" comes to mind...I'm in the right room.
Last week I told you that I was liking Shtisel on Netflix...now almost at the end of season one I am telling you that I am loving Shtisel on Netflix.
By rights I should be too embarrassed to admit this...but since it's just you and me...yes, yes I did treat myself to season 3 of Mama June from Not to Hot and yes, yes that's an accurate measure of my maturity level. One episode down and many more to go.
On the movie side, hubs and I saw Midnight Cowboy this weekend while the boys were at their mom's. I say watch it for Jon Voight and Dustin Hoffman, skip it if you're in the mood for something light, and definitely skip it if you have young 'uns around. Fair warning if you watch the trailer let alone see the movie you will have that song playing in your head for a good long while.
For father's day viewing we treated ourselves to some Schwarzenegger with Total Recall.
After reading a string of really good books these past few weeks, I ran into a string of duds. On the bright side, they were all Kindle library books so no $ lost. ISO of a good read.
