Weekly Eats: Real Men Eat Quiche

 

A weekly roundup: eats, watches, and reads.  The big news item of this week is that real men eat quiche!!!

Breakfasts

I did the "three breakfast thing" on my running days and the "one breakfast plus snacks" on non-running days.  One of my many breakfasts this week was a bagel thin with cream cheese, avocado, and salmon.


Lunches

I tried something new!  That's Featherstone Nutrition's Easy Pad Thai Spaghetti. I added air fried tofu.  That's Banza Chickpea linguine which I liked a lot.


Dinners

Monday: Quiche night!  The backstory is that we had mini quiches for Easter, and my husband always makes the joke that "real men don't eat quiche" which mystified the boys because I don't believe they've ever had traditional quiche.  That got me to thinking that I've never made quiche for a family dinner and BTW everyone in my family loves eggs, cheese, and pie crust so...

We had a few ham dinners last week and were still facing a mountain of ham which got me to thinking that...yeah quiche is a great way to use up ham.  Last week I packed up all of our leftover ham into quiche sized portions and tossed it in the freezer. 

I made the crust the day before and rolled it out over lunch, and then took a quick work break at 4 to mix it all up and drop it in the oven.  Voila, at 5:00 we had a freshly baked quiche ready and waiting for us.  It was a hit so there will be more quiches in our future.

Tuesday: leftover spaghetti from Sunday.  I had the foresight to pick up a zucchini to zoodle up and add to my pasta.

Wednesday: another new recipe!  This is Joy the Baker's No-Chop One-Pot Chicken Meatball Dinner.

Pros: super easy, and the adults thought it was delicious.

Cons: oof one kid was not a fan.  His description of chicken meatballs, feta, and kalmata olives: "these flavors don't go together".  Both boys seem to have an odd association with kalmata olives.

Hey you miss 100% of the shots that you don't take...I won't make this for a family dinner again, but it's going in my date night recipe register.

Thursday: the kids had leftover quiche, hubs and I had salmon bowls.


Friday: pizza night!  The menfolk had Papa John's, I made my own.


Saturday: mandatory burger night


Sunday: baked ziti!


PLEASE OBSERVE: SEVEN DIFFERENT NIGHTS & SEVEN DIFFERENT MEALS!!!!  BOOYAH!!!

The curse of the "eat the same dinner from Sunday to Tuesday" was broken this week.  I don't expect this trend to continue, but wanted to point out that we made it happen once.  The MegaBig project that I'm working on has slowed down so I've had quite a few nights of being able to end work on time lately.  

Food Prep

This weekend I replenished my stash of freezer breakfast potatoes and also roasted up two sweet potatoes while I was at it.  The sweet potatoes will go toward another batch of bourbon sweet potato snack cookies.


Watching

Early 90's throw down of two movies that I had never heard of.

First up: Bruce Willis as cat burgler in Hudson Hawk


Next up: Back to the Future of 2032 with Demolition Man


Reading

Still working on The Flight Attendant by Chris Bohjalian, still like it a lot.

I'm taking a break from podcasts to listen to an audiobook: Share Your Stuff, I'll Go First by Laura Tremaine, super interesting.

  1. Wow! Quiche! Maybe even better than Shepherd's Pie. You've got to admit that the French knew what they were doing when they invented it. Yours looks fantastic!

    As a kid, I hated olives too... Maybe the boys will start to like the meatballs when they're older?

    I watched a nice film yesterday on Netflix about Enrico Piaggo, the inventor of the Vespa. It's called "An Italian Dream" and is set in the 1940s. I think you would like it! (Italian with English captions)

  2. Oh that quiche!!!!! I don't think I've ever made it myself, but I love eggs & cheese & pie crust. I've eaten it many a time elsewhere, so I need to add that to my to-do roster of recipes. BTW, I made homemade pizza again last weekend LOL That might become a new weekly (or bi-weekly) gig ;-)

  3. Okay, I'm impressed by your dinner variety! In our house it's almost impossible to make anything that everyone likes, so your meatball story doesn't surprise me. Inspired by you, I was all set to make pizza last weekend but then the school had a fundraiser where we were supposed to order from Mod Pizza (not sure if that's everywhere or just a Florida thing?) I never pass up an excuse not to cook, so...
    I'll be interested to hear your review of that audiobook. I've heard good things about it!

  4. Oh and one more thing... I love how kids nowadays have turned into gourmet food critics. I don't think it would ever have occurred to me to say that the flavors of a dish my mom made didn't go together. But my son does that too- he'll critique the texture, flavor, appearance... I think they've been watching too many cooking shows!
    Thanks for the comments about Mexican Gothic. I'm glad I started a different book and not that one!

    1. OMG...I would never have DARED to say anything except "thank you" about my mom's cooking. But at the same time I'm glad that the boys don't live in the same world that I grew up in. The "clean plate laws" that existed in my childhood did a lot of damage.

  5. My hubs LOVES quiche. We have it quite often! Do you use the pie crusts from Trader Joes? They taste good but they are so hard to work with.

    I'm reading What Comes After by Joanne Tompkins. It got rave reviews, but it's really long. It's good but I don't love it. I'm sticking with it because 'everyone' said its good...lol

    1. Oh I have fallen into the trap of sticking with so many books because of "everyone"...

      I actually make my own pie crusts, though I think it's 100% OK to use store bought crusts. Not everyone loves working with pastry or has time. Life is short so why spend it reading books that we don't love or on kitchen tasks that aren't fun for us?
